Ingredients:
2 cups peeled black-eyed beans (or honey beans)
1 medium onion
2–4 fresh pepper (Scotch bonnet or chili), to taste
1 teaspoon salt (or to taste)
½ cup water (as needed)
Vegetable oil for deep frying

Step 1: Peel the Beans
Wash the beans thoroughly.
Soak them in warm water for about 20–30 minutes.
Rub the beans between your palms to remove the skins.
Rinse several times until all the skins float away.
Drain the peeled beans.
Step 2: Blend the Beans
Put the peeled beans into a blender.
Add the onion and fresh pepper.
Add a little water gradually.
Blend until you get a very smooth, thick paste.
Step 3: Season the Batter
Pour the blended mixture into a bowl.
Add the salt.
Mix well.
Step 4: Whisk the Batter
Beat the batter with a spoon or whisk for 5–10 minutes.
Continue until it becomes light, fluffy, and airy. This helps the akara become soft inside.
Step 5: Heat the Oil
Pour enough vegetable oil into a deep frying pan.
Heat the oil over medium heat.
Test the oil by dropping a little batter into it. If it rises immediately and sizzles, the oil is ready.
Step 6: Fry the Akara
Scoop small portions of the batter with a spoon or your hand.
Gently drop them into the hot oil.
Do not overcrowd the pan.
Fry for 3–5 minutes on each side until golden brown.
Turn occasionally so they cook evenly.
Step 7: Drain the Oil
Remove the akara with a slotted spoon.
Place them on paper towels to absorb excess oil.
Step 8: Serve
Serve the akara hot with:
Pap (Akamu/Ogi)
Custard
Bread
Fried yam
Garri
Tea or any preferred drink
